Well Body-Wednesday: RECIPE - SHRIMP FRIED RICE

I love the idea of Chinese food.  Done well, it has loads of fresh vegetables and lean protein.  I’ll even splurge on having Chinese take-out every once in a while.  Unfortunately, there is a down side to Chinese food.  It can be quite high in added oil (translation - fat) and the sodium in Chinese food can hit your daily allowance in just one meal.  Plus, I’m always looking to take restaurant favorites and make them myself so I know exactly what ingredients are going into the dish.

Mindful Monday: MINDFUL MOMENTS

I think this has happened to all of us.  You’re introduced to someone you’ve never met, but because you weren’t fully present in the moment of introduction, you don’t remember the person’s name 2 seconds later.  This can certainly be embarrassing for you later when you can’t call them by name but more than that, wouldn’t it make the other person feel good to be called by name by someone they’ve only met once?
 
So often we think of mindfulness as something to work on to improve our own lives.

Spirit-Filled Saturday: DEFINITION MOM

With Mother’s Day coming up tomorrow, I wanted to take a few minutes to think about the role moms play in our lives.  I’ve heard many an adult woman define their mom as their best friend.  Although this definition doesn’t bother me, it has always struck me as quite understated for defining “mom”.  If we’re VERY lucky, our moms have been a part of our lives from the beginning and have played hundreds if not thousands of roles.
 
It starts off with the basics: caregiver, nurse, protector.

Well-Body Wednesday: GOIN’ CRACKERS

I don’t know about you, but I love to snack on crackers.  Unfortunately, the grocery store shelves are full of crackers with processed flour, artificial colors, and artificial flavors – not what I’m looking for.  So this week I have two solutions to satisfy your cracker cravings.  One is at your grocery store and one is a do-it-from scratch recipe.  By far, my favorite cracker on the shelves for nutrition and taste is Triscuits Hint of Salt.  A serving of 6 crackers has just 120 calories, .

Spirit-Filled Saturday: BREAKING OUT

It all started with a cake plate and a kitchen cleanout.  I was getting ready to put all my dishes and bakeware back into my newly-renovated kitchen by sorting out what I don’t really use.  The pile for Goodwill was grew rather large and I was looking at it all when my husband came over and noticed that I was giving away a beautiful, glass cake pedestal with a dome cover.  It had been a wedding gift.  I certainly love the idea of this dish but truth is, it’s almost never gotten used, so I thought it should go to a home where it was used and appreciated.
